Nkosi Lodge's Secret Signature Burger Recipe

Famous chefs, including Gordon Ramsay, understand that when showcasing a chef’s talent, the proof is in the pudding (mind the pun) when it comes to executing a simple dish with perfection. Kudakwashe Lifa, the new head chef at Nkosi Lodge, is one such example, so we aren’t surprised that he picked Nkosi Lodge’s Secret Signature Burger Recipe when we asked for one of his favourite meals.

Chef Lifa is passionate about food. His eyes twinkle with glee as he describes his plans to continue elevating the menu at Nkosi Lodge in Victoria Falls, Zimbabwe. At Nkosi Lodge, he has the ideal platform to express and share that passion with the world. His cooking style is one of simplicity but with complex combinations of flavours using top-quality local, seasonal and responsibly sourced ingredients.

Signature dishes include goat curry with savoury rice and rolled poppadum with sambals. Another is the sweet potato gnocchi served in a mornay sauce with mushrooms and wilted spinach. For dessert, guests enjoy treats, including local red wine poached pears with a chocolate disk.

Kudakwashe Lifa may look incredibly young for the coveted role of head chef; however, he studied at the School of Hospitality in Bulawayo for five years. During this time, he represented the school in Zimbabwean chef competitions and won two gold medals and a silver in the live cooking, mystery basket and carving display categories, respectively. Moreover, Chef Lifa was selected in 2017 to be part of the National Chefs team and won a gold medal in the Skills Challenge and live cooking at the Nelson Mandela Culinary Cup in Johannesburg, where Zimbabwe joined eight other African countries in the competition.

Nkosi Secret Signature Burger Recipe

This Victoria Falls burger recipe is simple and deluxe with top-quality beef mince, fresh, crisp toppings and a cracking house BBQ sauce.

Nkosi Victoria Falls Burger Patty Ingredients

  • 200g beef mince
  • 20g coriander (chopped)
  • 20g white onion (finely chopped)
  • Freshly ground black pepper and salt for seasoning.
  • 1 brioche bun (cut side toasted)

 

Nkosi Victoria Falls Burger Sauce Ingredients

  • 30ml ketchup
  • 20ml chutney
  • 5ml soy sauce
  • 1 gherkin finely chopped
  • 20g red onion finely chopped

 

To serve (optional)

  • Tomato slice
  • Onion marmalade
  • 2 slices of streaky bacon fried
  • 5 slices of gherkins
  • 10g Mustard to spread on toasted bun sides
  • Gem lettuce
  • Slice of cheddar cheese

 

Nkosi Victoria Falls Burger Method

  • Break up the thawed mince in a bowl with a fork and gently mix in the coriander and onion until everything is mixed through
  • Season the mixture (be careful not to over season.
  • Use a large scone cutter to mould the patties and store them in the fridge.
  • Sweat the onions for the sauce and add all sauce ingredients allowing to simmer for at least 10 minutes.
  • Fry the burger on high heat just to colour both sides.
  • Remove the burger, place it on an oven tray and smother it with the BBQ sauce, then finish in the oven at 180 degrees until it’s cooked to your liking.
  • Add the cheese slice and allow it to melt under a salamander or in the oven.
  • Serve the burger and toppings of your choosing inside the toasted brioche burger bun with a side of crispy fries, and enjoy.
